Chocolate Lava Cake



  1. Melt chocolate with unsalted butter in microwave.

  2. In a large mixing bowl, add eggs, yolks, granulated sugar, and a pinch of salt.

  3. Mix ingredients for 1 minute with a hand mixer using medium speed.

  4. SLOWLY pour-and-mix the chocolate-butter mixture with the egg mixture.

  5. Add vanilla extract, then sift in flour. Mix well.

  6. Carefully pour the lava cake mixture into 4 x 6oz-ramekins. Tap the ramekins against the counter a few times to remove air bubbles.

  7. Add 1 cup cold water in Instant Pot. Place trivet in Instant Pot, then stack the ramekins on top.

  8. Pressure cook at High Pressure for 7 minutes + Quick Release.

  9. Carefully open the lid and avoid dripping.

  10. Cool ramekins. Sift powdered sugar on the cakes. (Optional: decorate with strawberries.) Serve immediately.
