Potato Leek Soup



  1. Heat Instant Pot using Sauté: More function. Wait until it says HOT (~8 mins).

  2. Add unsalted butter and chopped leeks. Season with a pinch of salt, then cook leeks until softened (~4 mins).

  3. Add bay leaves, dried thyme, and minced garlic. Saute for another 30 seconds.

  4. Pour in unsalted chicken stock, soy sauce, and diced potatoes. Give everything a quick mix.

  5. Pressure cook at High Pressure for 5 minutes. 15 minutes Natural Release.

  6. Add in heavy cream. Taste and season with more salt if desired.

  7. Garnish with finely sliced green onions, bacon bits, fried leeks, or fresh herbs. Season with freshly ground black pepper. Serve immediately.
