Baby Beluga Lentils



INGREDIENTS


PREPARATION

  1. Cook rice in saucepan or rice cooker.

  2. Microwave yam/sweet potato for about 6-7 minutes(?) till still firm, but with 'give'. You want to be able to cube it and have it hold its shape when stirred in the sauce.

  3. Cook lentils in saucepan for about 15 min. after boil till soft, but not mushy. Drain and set aside.

  4. Rub garlic cloves in olive oil and roast in shallow pan for about 1 5 min. at about 300d.? Slip paper shells off and cut in halves or quarters.

  5. In large deep pan/skillet, sauté zucchini; diced carrots, mushrooms in 1 tablespoon oil and then some broth to soften.

  6. Add roasted garlic and raisins. Add drained lentils. Add jar of Marsala

  7. Simmer Sauce, coconut milk and curry powder (or your own concoction). Add and fold in gently the cubed, semi-baked sweet potato. (Add sherry or white wine to extend sauce if you like, and simmer for about 10-1 5 minutes.)

  8. In wide, shallow (about 3-4"deep) baking dish, layer the spinach, jasmine rice, saucy vegetables. Bake for about 10 minutes to meld flavors.

  9. Top with chopped peanuts and diced avocado.
