INGREDIENTS


PREPARATION

  1. Add 1/2 bag of Butler Soy Curls to leftover chile water from Chile Sauce to rehydrate. Allow to soak for at least 10 minutes - then drain and roughly chop.

  2. Pour finished Red Chile Sauce into Instant Pot (or large soup pan on stovetop)

  3. Add cubed potatoes and strained soy curls to chile sauce

  4. If using IP - set to MANUAL and pressure cook for 10 MINUTES. If using stovetop, simmer all ingredients until potatoes are fork tender.


New Mexican Red Chile Sauce

PREPARATION

  1. Preheat oven to 250 degrees F.

  2. Arrange 20 chile pods on a cookie sheet and roast for 20 minutes. Flip chiles halfway through roasting process

  3. After chiles have cooled to touch, remove stems and seeds

  4. Add chiles and onion to large pasta pot and cover with water

  5. Bring to a boil, then reduce heat, cover, and simmer for 10 minutes

  6. Strain the chiles if desired. Reserve 2 cups of water for blending

  7. Carefully remove chiles and onion from pot and add to blender

  8. Add remaining ingredients and blend until smooth
