Green Chile Stew



INGREDIENTS


PREPARATION

  1. Sauce your 'meat' of choice using the SAUTE MODE and LESS setting of your IP.

  2. Add the Garlic Pwdr, Onion Pwdr, Chili Pwdr, & Cumin and stir frequently until lightly browned

  3. Use a little veggie broth to keep it from sticking

  4. Remove from pot and set aside

  5. Saute onion, carrots, and celery on SAUTE MODE and LESS setting until soft and translucent

  6. Use Veg Broth as needed to keep from sticking

  7. Be sure and scrape up any browned bits on bottom of pot as these add to the flavor

  8. Add minced garlic and stir for 1 minute

  9. Turn OFF IP

  10. Add Veggie Broth, Water, Oregano, and dried Beans

  11. Attach lid, set to SEALING, and select MANUAL mode for 30 minutes

  12. After time is up, allow to vent naturally for 10 minutes and then use quick release

  13. Stir broth and add potatoes, chiles, tomatoes, and the "meat" you set aside

  14. Attach lid, set to SEALING, select MANUAL mode and 8 minutes

  15. After time is up, allow to vent naturally for 5 minutes then quick release

  16. Stir in Lime Juice

  17. Stir in Masa Flour - 1 Tbs at a time, until desired thickness - up to 3 Tbs
