Oatmeal Chocolate Chip Cookies
INGREDIENTS
- ☐ 3 cups rolled oats
- ☐ 1 cup all-purpose flour
- ☐ ½ tsp. baking soda
- ☐ Pinch salt
- ☐ 12 Tbl. softened butter
- ☐ 1¼ cups packed light brown sugar
- ☐ 2 large eggs
- ☐ 2 tsp. vanilla extract
- ☐ 1¼ cups semisweet chocolate chips
PREPARATION
1. Preheat the oven to 375°F.
2. Grease two baking sheets.
3. Whisk together the oats, flour, baking soda, and salt. Set aside.
4. Cream the butter and sugar until light and fluffy.
5. Add the eggs, one at a time, and beat until blended.
6. Add the vanilla and beat to blend.
7. Add the flour mixture, a little at a time, and beat until blended. Stir in the chocolate chips.
8. Drop the dough in rounded teaspoonfuls onto the baking sheets, about 2" apart. Bake for 10 to 12 minutes until set.
9. Cool for about 1 minute on the baking sheets and then cool completely on wire racks. Makes 25 to 30 cookies.
